Strawberry-Banana "Ice Cream"


One of our favorite desserts is Strawberry-Banana "Ice Cream". It is sooooooo easy and yummy I thought I would share it. We prefer cultured coconut milk yogurt for this recipe but any yogurt will work. Kyle, who is not a coconut fan, even likes it. The sweetener is optional. I am sure other sweeteners, such as stevia, would also work. I have made this with frozen blueberries also. It does not come out as much like ice cream but is still very good. I'm sure other frozen fruit would work too.

16 oz plain yogurt
1 frozen banana (optional)
2 handfuls frozen strawberries
1-2 tbsp honey

Put all the ingredients into a food processor. Blend until smooth. Serve immediately. The leftovers can be spooned into popsicle molds and frozen.

Celebrating Jennie Mae

We are off first thing tomorrow morning to celebrate my precious Grandma Fulk's (aka Jennie Mae) 95th birthday. She has no idea anyone is coming. Boy, will she be surprised. When I talked to her this week, she said she hoped we would come see her soon. Heeeee! Since I won't be here to do a post I thought I would do it tonight.

Anna's Book of the Century for Jennie Mae

Anna spent hours and hours researching events from the 1910's to date to make a Century Book for her Great-Grandma Jennie Mae. It was a great recap for her Grandma as well as a great history lesson for her. After many battles with our printer and a trek through the snow storm to Walmart for more ink, her project is done.
